Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 large zucchini, cut into 1/2 inch slices, 1/2 c. onion, chopped, 6 tbsp. oleo, 2 1/2 c. herbal stuffing and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil zucchini 3 minutes and drain.
Saute onion in 2 Tbsp. oleo.
Stir in 1/2 c. stuffing, soup and sour cream.
Turn into casserole dish and top with remaining stuffing and oleo.
Bake at 350Β° for 30 to 40 minutes.
May be prepared a day ahead, except for baking.
Serves 4 to 6.
