Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 medium zucchini, 1 lb. ground beef, 3/4 c. sliced mushrooms, 1 can cream of celery soup (undiluted) and parmesan cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Remove pulp from zucchini and cut into small chunks.
Boil for 10 minutes in small amount of salted water.
Drain well and mash. Brown meat; add mushrooms, onion and green pepper.
Cook a bit longer.
Add zucchini, soup and croutons.
Put in casserole dish and sprinkle top with cheese.
Bake uncovered for 1/2 hour in 375Β° oven.
