Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 c. zucchini, 1/4 c. onion, 1 can cream of chicken soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook squash and onion in salted water for 5 minutes.
Drain. Combine chicken soup and sour cream.
Stir in carrots.
Fold in squash and onion.
Combine stuffing mix and butter.
Spread half stuffing mix in bottom of a 13 x 9-inch pan.
Spoon vegetable mixture on top.
Sprinkle remaining stuffing over vegetables. Bake at 350Β° for 25 to 30 minutes.
Freezes well.
