Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 medium zucchini, sliced thin, 1/2 c. chopped onion, 6 tbsp. butter, divided, 2 1/2 c. herbed stuffing and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook zucchini in boiling water until tender; drain.
Saute onions in half the butter until tender.
Remove from heat.
Mix 1 1/2 cups stuffing, onions, soup and sour cream; stir in the zucchini.
Place in 1 1/2-quart casserole.
Mix remaining stuffing and melted butter.
Toss gently over top of casserole and bake at 350Β° for 40 minutes.
