Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. sliced zucchini, 1/4 c. sliced onions, 1 can chicken or mushroom soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook zucchini, onions and carrots in salted water for 5 minutes.
Drain.
Save 1/2 cup of liquid.
Combine soup, sour cream, oleo and liquid.
Make stuffing; place in a 13 x 9-inch pan.
Combine vegetables and soup mixture; then place on top of stuffing.
Top with grated Cheddar cheese.
Bake at 350Β° for 25 to 30 minutes.
