Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. (6 c.) sliced zucchini, 1/4 c. chopped onion, 1 can cream of mushroom soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook squash and onions in boiling water 5 minutes; drain. Combine soup, sour cream and carrots; fold in squash and onion. Combine stuffing with butter.
Spread 1/2 of stuffing in bottom of 9 x 13-inch pan.
Spoon zucchini mixture over that.
Sprinkle remaining stuffing on top.
Bake at 350Β° for 25 to 30 minutes.
