Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 medium zucchini, sliced 1/2-inch thick, 3/4 c. grated carrots, 1/2 c. chopped onion, 2 1/4 c. herbed stuffing and 6 tbsp. oleo, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook the zucchini for 4 minutes. Drain. Gently stir in carrots, onion, 1/2 cup stuffing, sour cream and soup.
Turn into 1 1/2-quart casserole.
Melt the oleo.
Toss with remaining stuffing. Top casserole. Bake at 350Β° for 30 minutes. Serves 6.
