Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 3 c. zucchini, peeled and sliced, 4 eggs, slightly beaten, 1/2 c. oil, 1/2 c. chopped onion and 1/2 c. parmesan cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350°.
In a large bowl, mix together eggs and oil.
Add onion and garlic.
Add Bisquick, Parmesan cheese, parsley and oregano.
Mix well with wooden spoon.
Add zucchini; mix until moistened.
Sprinkle in salt and pepper as desired. Pour into lightly greased 9 x 13-inch baking dish.
Bake at 350° for 30 minutes.
