Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. yellow or green zucchini, 1/4 c. chopped onions, 1 can condensed chicken or mushroom soup, 1 c. dairy sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In saucepan, cook sliced squash (unpeeled) and chopped onions in boiling water 5 minutes; drain.
Combine soup, sour cream, stir in carrots, fold in zucchini and onions.
Combine stuffing mix (dry) with butter or margarine.
Spread 1/2 stuffing mix on bottom of casserole.
Spoon vegetable mixture on top.
Sprinkle remaining stuffing over top.
Bake at 325Β° for 25 to 30 minutes.
