Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 1/2 medium sized zucchini, cut into cubes, boiled and drained, 1 can cream of mushroom soup, undiluted, 1/2 c. shredded cheddar cheese, 1/2 c. sour cream and 1 shredded carrot, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In bowl, manually stir together cooled zucchini, soup, cheese, sour cream, carrot and onion.
In pan, melt butter; add stuffing mix.
In greased casserole dish, put one layer zucchini mix and half of stuffing mix.
Add rest of zucchini mix and top with stuffing mix.
Bake at 350Β° for 30 minutes.
