Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 1/2 lb. zucchini (3 small ones), 1 c. cream of chicken soup, 1 (8 oz.) carton sour cream, 1 small onion, diced and 1 c. water chestnuts, drained, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cut zucchini into thin slices, but do not peel.
Boil about 10 minutes and drain.
Mix next 4 ingredients.
Melt margarine and pour over stuffing mix.
Mix well.
Add to zucchini.
Add 1/2 of stuffing mix to zucchini mixture.
Pour into greased baking dish. Top with remaining stuffing mix.
Bake at 350Β° for 30 minutes.
