Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1 (6 oz.) pkg. chicken flavor stove top stuffing mix, 1/4 c. melted butter, 4 c. grated zucchini, 1/4 c. chopped onion and 1 c. grated carrot, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a bowl, mix the bread crumbs and seasoning packet of stuffing mix with the melted butter and stir.
Cook zucchini and onion together in salted water for 5 minutes.
Drain and set aside.
Combine chicken soup, sour cream and carrots.
Stir in the onions and zucchini.
Put half of the stuffing mix into a greased 2-quart casserole dish.
Pour in the zucchini mixtures and top with the remaining stuffing.
Bake, covered, for 25 to 30 minutes at 350Β°.
Remove cover for the last 5 minutes.
