Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 c. sliced zucchini, 2 c. boiling water, 2 eggs, 1 c. mayonnaise and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook zucchini in water until tender.
Strain. In large bowl, beat eggs.
Stir in mayonnaise, onion, green pepper, cheese, salt and pepper.
Add zucchini.
Turn into greased 1 1/2-quart baking dish.
Dot with butter and sprinkle with bread crumbs.
Bake in a 350Β° oven for 30 minutes or until bubbly.
Makes 6 servings.
