Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 c. cut-up zucchini, 1 c. sour cream, 1/4 c. chopped onions, 1 c. shredded carrots and 1 can condensed soup (mushroom or chicken), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook onions and zucchini in salted water; drain.
Combine soup, carrots, sour cream and fold into zucchini and onion.
Mix melted butter and stuffing.
Spread half of this mixture into a 9 x 13-inch glass pan (greased).
Spread zucchini mixture over this, then spread rest of stuffing mixture on top.
Bake at 350Β° for 35 minutes.
