Zucchini Bread
Zucchini Bread is an impressive dinner. Made with 2 c. sugar, 1 c. oil, 3 eggs, 2 c. grated zucchini, (leave skin on) and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large bowl, mix together the sugar, oil, eggs, zucchini and vanilla.
Sift together the flour, baking powder, soda, salt, cinnamon, ginger and cloves, then add the chopped walnuts.
Add the flour mixture to the zucchini mixture and stir well.
Pour into 2 loaf pans and bake at 325Β° for 1 hour + a few minutes, or until bread tests done.
