Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 2 eggs, 1 c. oil, 2 c. coarsely grated zucchini squash with seeds removed, 2 c. flour and 2 tsp. soda, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Sift flour, soda, cinnamon, baking powder and salt together. Mix eggs, oil, sugar and vanilla; beat to mix well, then add the zucchini.
Add the dry ingredients to the mixture and mix well, then add 1 cup pecans or chopped walnuts and 1 cup of raisins. Pour into 2 greased and floured bread loaf pans.
Bake at 350Β° for about 1 hour.
