Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 2 c. sugar, 1 c. vegetable oil, 2 c. grated raw zucchini and 3 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat eggs until light and foamy.
Add sugar, oil, zucchini and vanilla.
Mix lightly, but well.
Combine flour, salt, soda, baking powder and cinnamon.
Add to the zucchini mixture.
Stir until well blended.
Add nuts and put into 2 (9 x 5 x 3-inch) greased and floured loaf pans.
Bake at 350Β° for 1 hour.
Makes 2 loaves.
