Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 4 eggs, 1 1/2 c. vegetable oil, 3 c. grated unpeeled zucchini, 3 c. sugar and 3 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place eggs, oil, zucchini and sugar in large mixing bowl. Beat 2 or 3 minutes.
Sift dry ingredients and add to the egg mixture.
Beat until blended.
Stir in nuts.
Pour into 2 or 3 loaf pans, well greased and floured.
Bake at 350Β° for 25 or 30 minutes.
