Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 large eggs, 1 c. oil, 2 c. granulated sugar, 3 tsp. vanilla extract and 2 c. peeled, grated zucchini, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Beat eggs; add oil, sugar, vanilla and grated zucchini and beat again.
Sift dry ingredients together.
Add to batter and beat until smooth.
Fold in nuts and coconut (reserving 1/2 cup to sprinkle over batter).
Pour batter into 2 greased loaf pans and sprinkle with remaining coconut.
Bake in a 350Β° oven for 1 hour.
