Shred the zucchini and mix with eggs, salad oil, sugar and vanilla. Blend well.

Sift together all the dry ingredients. Add to zucchini mixture. Stir only until well moistened.

Pour batter into 2 greased loaf pans. Bake at 350Β° for 50 to 60 minutes.
