Zucchini Bread
Zucchini Bread is an impressive dinner. Made with 3 eggs, 1 c. vegetable oil, 2 c. sugar, 2 c. grated unpeeled zucchini and 2 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
Beat eggs until light and foamy.
Add oil and sugar; beat well.
Stir in zucchini and vanilla.
Mix lightly but well.
Sifted flour, salt, baking soda, baking powder and spices should be sifted together.
Add to zucchini mixture and blend thoroughly.
Stir in raisins and nuts.
Pour batter into 2 greased and floured 9 x 5-inch loaf pans.
Bake for about 1 hour. Yield
2 loaves.
