Zucchini Bread
Zucchini Bread is an impressive dinner. Made with 3 eggs (room temperature), 1 c. vegetable oil, 1 c. sugar, 2 c. zucchini, grated and well drained and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs slightly in large bowl.
Stir in oil, sugar, zucchini, vanilla and pineapple.
Sift flour, baking powder, baking soda, cinnamon and salt, then stir into egg mixture until well blended.
Add raisins and walnuts.
Spoon batter into 2 well greased 8 x 5 x 3-inch loaf pans.
Bake at 375Β° for 1 hour.
Cool in pans, about 10 minutes.
