Zucchini Boats
Zucchini Boats is an impressive dinner. Made with 6 (6-inch) zucchini, 1 c. chopped onions, 1/2 c. chopped green peppers, 1/2 c. chopped celery and 1 c. chopped mushrooms, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place zucchini in microwave to soften.
Let cool, cut in half. Scoop out half of zucchini pulp and set aside.
Saute zucchini pulp, onions, pepper, celery, mushrooms, tomatoes, garlic, 2 tablespoons olive oil and spices.
Add Ricotta and Cheddar cheeses. Spoon evenly into zucchini boats; top with bread crumbs.
Place in oiled pan.
Drizzle olive oil over zucchini.
Cover.
Bake in 350Β° oven for 45 minutes or until hot and bubbly.
