Zucchini Beef Casserole
Zucchini Beef Casserole is an moderately easy dinner. Made with 3 medium zucchini, cubed, 1 (8 oz.) can mushrooms, drained, 2 tbsp. vegetable oil, 1 lb. ground beef and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute zucchini and mushrooms in vegetable oil until tender. Drain well and set aside.
Cook and ground beef and onion in skillet until meat is browned.
Drain off drippings.
Stir in tomato sauce, flour, oregano, basil, salt and pepper. Reduce heat and simmer uncovered for 5 minutes.
Stir occasionally.
