Zucchini Apple Pie
Zucchini Apple Pie is an moderately easy dinner. Made with 4 c. sliced zucchini, 2 tbsp. lemon juice, dash of salt, 1 1/4 c. sugar and 1 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel and cut zucchini lengthwise in quarters.
Remove seeds; slice crosswise.
Cook zucchini until tender-crisp and drain.
In separate bowl mix zucchini, lemon juice and salt; set aside.
In another dish combine the cinnamon, cream of tartar and nutmeg; mix and add to the zucchini mixture.
Blend well all ingredients. Pour into pie crust and dot with butter.
Add the top crust and bake at 375Β° for 30 minutes or until golden brown.
