Zucchini and Rice Casserole
Zucchini And Rice Casserole is an moderately easy dinner. Made with 2 tbsp. olive oil, 1 large onion, chopped, 2 lb. zucchini, chopped, 1 tsp. minced garlic and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute onion in oil.
Add zucchini, garlic, salt and pepper. Cook 5 minutes until zucchini is bright green.
Beat eggs in a large bowl.
Add cheese, parsley, rice and thyme.
