Zippy Cheddar Crisps
Zippy Cheddar Crisps is an moderately easy dinner. Made with 1 c. yellow cornmeal, 2 tbsp. butter or margarine, 1 tbsp. sugar, 3/4 c. (3 oz.) shredded cheddar cheese and 3 green onions, minced, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Preheat oven to 400°.
Generously grease 2 large baking sheets; set aside.
In medium bowl, combine cornmeal, butter, sugar and salt.
Stir in boiling water, mixing until blended.
Stir in cheese, onions, peppers and pimiento.
Drop level teaspoon batter, 1 inch apart onto prepared baking sheets.
With spatula flatten batter into 2-inch rounds.
Bake 18 minutes or until golden and slightly brown around edges.
Makes 6 dozen.
