Yummy Eggplant is an moderately easy dinner. Made with 1 large eggplant, peeled and cubed, 1 onion, diced, 1/4 c. parmesan cheese, grated, 1 jar spaghetti sauce and 3 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil eggplant, covered in water, until tender; drain and mash. Add remaining ingredients; mix well.
