Yokan(Sweet Bean Dessert)
Yokan(Sweet Bean Dessert) is an easy dinner. Made with 4 c. water, 4 sticks red and white kanten, 3 (18.34 oz.) cans koshi an and 1 c. white sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Wash the kanten and tear into small pieces; soak overnight. Add sugar and boil until the kanten is melted.
Turn the heat to medium and add the koshi an and mix well.
Cook over low heat for 45 minutes, stirring constantly.
Pour into a 7 x 11-inch pan or larger and cool.
Do not move the pan while cooling because the yokan will be wrinkled.
