Yellow Summer Squash Casserole
Yellow Summer Squash Casserole is an moderately easy dinner. Made with 2 c. sliced yellow squash (unpeeled), 1 medium onion, sliced thin, 1 c. sour cream, 1/2 lb. cheese and 1 carrot, finely grated, this recipe delivers authentic, satisfying flavors. Cook squash and onion in salted water until tender; drain.
Add to the sour cream, beaten eggs, carrot, oleo, pepper and soup; mix well.
Put in a 10-inch dish.
Put half stuffing.
Cut cheese in small pieces; put on top.
Dot with oleo.
Put on remaining stuffing.
Bake at 350Β° for 45 minutes.
