Yellow Squash Casserole
Yellow Squash Casserole is an moderately easy dinner. Made with 6 to 8 yellow squash, sliced crosswise, 1 large white onion, sliced thinly, salt and pepper to taste, 1 (10 3/4 oz.) can mushroom soup, undiluted and beaten with 2 eggs and 1 1/2 c. pepperidge farm herb stuffing mix, this recipe delivers authentic, satisfying flavors. Cook squash and onion in water until tender.
Drain.
In a greased casserole, layer vegetables with a mixture of soup, cheese and seasonings.
