Yellow Squash Casserole
Yellow Squash Casserole is an easy dinner. Made with 3 to 4 large crookneck squash, 1 medium onion, 40 to 50 ritz crackers, crushed, 1 to 2 sticks butter or margarine, melted and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut squash into wedges and chop onion.
Place both in a small amount of water and steam until squash is soft and onion clear. Strain.
Take a potato masher and mash out excess water.
Take a 2-quart casserole dish and layer squash.
Season with salt and pepper and some crushed crackers.
Pour some melted butter over layer and repeat until gone.
Bake in preheated 325Β° oven for about 30 minutes or until lightly brown.
