Yankee Cranberry Pie
Yankee Cranberry Pie is an moderately easy dinner. Made with 4 c. cranberries (12 oz. pkg.), 2 c. sugar, separated, 1 c. chopped nuts (walnuts, pecans or filberts), 2 large eggs and 1 c. unsifted flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Butter a 10-inch pie plate or quiche tin.
Spread berries over the bottom and sprinkle 1 cup sugar and nuts over them.
In small bowl, beat eggs until frothy.
Add 1 cup sugar and beat well. Slowly mix in flour, margarine and oil.
Beat until blended and pour over berries and nuts.
(I usually add a little vanilla and use less sugar.)
Bake at 350Β° for 75 minutes.
