Yankee Bean Chowder
Yankee Bean Chowder is an moderately easy soup you can prepare in about 1 hour 22 minutes. Made with c. dried pea beans (or yellow eyes), medium onions, finely chopped, c. diced carrots, green peppers, diced and c. canned tomatoes, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Soak the beans until they swell (couple of hours).
Drain and put in kettle with 3 quarts of fresh water.
Add the onion and bring to a boil.
Adjust the heat and simmer until beans are just tender (1/2 to 3/4 hour).
Add other vegetables and seasoning and cook until vegetables are tender (about 25 minutes).
Add milk last.
Serve as soon as it is hot.
Makes 12 to 15 servings. (Half it for family of six.)
