Wyatt's Eggplant Casserole
Wyatt'S Eggplant Casserole is an moderately easy dinner. Made with 1 lb. eggplant, 1/2 lb. bread crumbs, 1/2 c. evaporated milk, 1/4 c. whole milk and 1/2 stick oleo, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Peel and cube eggplant.
Boil until tender, about 30 minutes. Mix together crumbs and milks and add to vegetables that have been sauteed in the oleo.
Add remaining ingredients (except cheese). Bake in greased casserole dish 35 minutes at 350Β°.
Add cheese and bake another 10 minutes.
