Wood Chuck

Make a roux of flour and melted butter.
Add milk.
Cook to thicken.
Add cheese and remove from heat.
Stir until cheese melts.
Saute mushrooms and celery in 2 teaspoons butter; add to sauce.
Add turkey or chicken meat (cooked and diced) and 2 hard-boiled eggs (diced).
Serve on plates over the Chinese noodles.
Garnish with slices of the 3rd egg.
