Wilted Red Onions
Wilted Red Onions is an moderately easy dinner. Made with 1 1/4 lb. red onions, peeled and sliced thin, 1/2 c. vegetable oil, 1/2 c. white vinegar, 1/2 c. water and 1/2 tsp. black pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Put onions in a crockery bowl.
Mix all other ingredients together in a saucepan and bring to a boil.
Pour over the onions. When cool, cover and refrigerate overnight.
Makes good onion sandwiches or a topping for tomatoes or just plain as a side dish. Makes 3 cups.
