Wild Rice Soup
Wild Rice Soup is an moderately easy dinner. Made with 1 c. wild rice, 1 1/2 c. water, 1 tbsp. butter/margarine, 1/2 lb. bacon and 1 large onion, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Rinse wild rice.
Simmer rice in 1 1/2 cups water and butter until soft.
Set aside.
Chop bacon and onion into small bits. Brown together and set aside.
In large pot, heat cream of potato soup, 1 cup water and milk.
When hot, slowly add slices of cheese.
When cheese is melted, add rice, bacon and onion.
Blend well.
Add milk and simmer about 30 minutes and serve.
