Wild Rice Hot Dish is an moderately easy dinner. Made with 4 c. diced or medium sliced chicken, 4 c. cooked wild rice, 1 can cream of celery or mushroom soup, 1 can chicken broth or water (10 3/4 oz.) and 1 small onion, this recipe delivers authentic, satisfying flavors. Soak wild rice overnight.
Rinse well.
Add 1 cup of wild rice to 3 cups boiling water in heavy saucepan (salt may be added).
Reduce heat and simmer, covered, for 35 to 50 minutes. Drain excess liquid.
For chewier texture, cook less time.
This yields 3 to 4 cups of cooked rice.
