Combine the first 5 ingredients in a saucepan; bring to a boil slowly, stirring until sugar is dissolved.
Boil without stirring over medium heat to 236Β° (or soft ball stage).
Remove from heat; let stand 15 minutes.
Do not stir.
Add flavoring; beat until the mixture loses its gloss, about 8 minutes.
Stir in cherries and walnuts.
Quickly put into greased tins (8 x 8-inch).
Cool; cut into squares.
Makes about 1 1/2 pounds of fudge.
