Western Stew
Western Stew is an moderately easy dinner. Made with 1 1/2 lb. boneless stew meat, 4 red potatoes, peeled and quartered, 4 carrots, scraped and sliced, 3 ribs celery, sliced and 1 1/2 onions, chopped, this recipe delivers authentic, satisfying flavors. Bring to boil everything except potatoes and cornstarch. Reduce heat; simmer in covered pot for 2 to 2 1/2 hours.
Add potatoes; cook for 30 more minutes.
Dissolve cornstarch in 1/2 cup cold water.
Add to cooked ingredients; bring back to boil for 2 minutes to thicken.
Good to cook ahead and take on a camping trip or to have in cold weather.
