Made with 1 c. mixed vegetable juice or tomato juice, 1 medium cucumber, 1 c. chopped green pepper, 1/4 c. chopped onion and 3 tbsp. freshly squeezed lime or lemon juice, this recipe delivers authentic, satisfying flavors. Pour vegetable juice into an ice cube tray, making 10 cubes. Freeze until solid.
Cut 2 slices from cucumber and reserve for garnish.
Pare and seed remaining cucumber, then cut into pieces. In blender, combine cucumber, pepper, onion, lime juice, vinegar, garlic and hot sauce.
Process on medium speed until smooth.
Stir in seltzer.
