Watermelon Pickles
Watermelon Pickles is an moderately easy dinner. Made with 7 c. (2 lb.) watermelon rind, 3 tbsp. salt, 1 qt. cold water, 1 qt. boiling water and 1 pt. white or cider vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Select a ripe melon.
Cut in eighths and cut out fruit.
Pare green and all the pink from rind.
Cut rind in thin slices, then in strips.
Measure 7 cups.
Cover with 1 quart cold water with 3 tablespoons salt.
Cover and let stand overnight.
Drain.
Cover with fresh water.
Cook 8 to 10 minutes.
Drain again.
