Water Chestnut Chicken
Water Chestnut Chicken is an moderately easy dinner. Made with 2 green peppers, cored and thinly sliced, 2 carrots, peeled and thinly sliced, 1 lb. chicken breasts, boned, skinned and sliced, 1 bunch green onions, chopped and 1 can sliced water chestnuts, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Stir-fry green peppers and carrots until tender.
(I use a little sesame oil for flavor.)
Remove from pan.
Stir-fry chicken. After done, add peppers and carrots to chicken.
Stir in green onions and water chestnuts.
Combine ginger, cornstarch, salt and soy sauce and pour over chicken and vegetables.
Stir quickly until heated and serve over rice.
