Walnut Zucchini Bread
Walnut Zucchini Bread is an moderately easy dinner. Made with 1/2 to 1 c. chopped nuts, 4 eggs or 1 carton egg beaters to equal 4 eggs, 2 c. sugar, 1 c. plus 1 tbsp. vegetable oil or applesauce and 3 1/2 c. unsifted flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Beat sugar into eggs or Egg Beaters.
Then beat in oil (or applesauce).
Combine dry ingredients; add to first mixture.
As you add the dry ingredients, add it one at a time and add a little bit of zucchini in between each one.
Stir in raisins, walnuts and vanilla.
Put into 2 greased and floured loaf pans (9 x 5 x 2 3/4-inch).
Bake at 350Β° for 55 minutes (may take longer in certain ovens).
Let stand for 10 minutes.
Remove and let cool. The loaves freeze well.
