Walnut Eggplant Parmesan
Walnut Eggplant Parmesan is an impressive dinner. Made with 1/4 c. olive or canola oil, 1 medium eggplant, sliced 1/4 inch thick, 1/2 onion, grated, 1/2 green pepper, grated and 1 carrot, grated, this recipe delivers authentic, satisfying flavors. Heat skillet, add oil and saute the eggplant until brown and soft.
Set aside.
In same skillet combine and simmer all other ingredients except the Mozzarella cheese for 15 minutes.
