Walnut Chicken Salad
Walnut Chicken Salad is an moderately easy dinner. Made with 1 lb. (2 c.) prepared chicken salad, 1/3 c. chopped walnuts, toasted *, 1 tsp. dijon mustard, 1/2 tsp. dried tarragon leaves, crushed and 1 small cantaloupe or honeydew melon, cut into quarters, lengthwise, seeds and rind removed, this recipe delivers authentic, satisfying flavors. In medium bowl, combine chicken salad, chopped walnuts, mustard and tarragon; mix well.
Cut each cantaloupe quarter lengthwise into 4 slices.
Arrange 4 slices on each of 4 spinach-lined plates. Spoon 1/2 cup chicken mixture onto each plate next to cantaloupe slices.
Garnish with walnut halves.
Makes 4 servings.
