Vicki'S Scholarship Cherry Pie is an moderately easy dinner. Made with 1 c. sugar, 1/4 c. cherry juice, 1/2 tsp. red food coloring, 4 c. sour cherries, drained (2 cans) and 1 tbsp. butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine sugar, 1/4 cup cherry juice and food coloring in heavy saucepan.
Cook to a rolling boil.
Add cherries and butter and cook 2 minutes.
Make smooth paste of cornstarch and 1/4 cup cherry juice.
Add to cherry mixture, stirring constantly and cook until thick.
Stir in lime juice and cinnamon.
