Very Ritzy Chicken(Great Company Dish) is an moderately easy dinner. Made with 3 whole chicken breasts, skinned and boned, 2 eggs, lightly beaten, 1 c. seasoned bread crumbs, 3 tbsp. olive oil and mozzarella cheese, sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dip chicken breasts into beaten eggs; coat with bread crumbs. Heat oil in a frying pan on medium heat.
Add coated chicken and brown lightly on both sides.
Remove from pan and place in a baking dish, topping each breast with a slice of Mozzarella cheese.
Mix together remaining ingredients in a saucepan and cook until mixture gets hot and thickens.
Pour over chicken and bake in a 350Β° oven for 25 minutes.
Serve over angel hair pasta.
