Vegetarian Delight
Vegetarian Delight is an impressive dinner. Made with 2 tbsp. creamy peanut butter, 1 tbsp. low sodium soy sauce, 1 1/2 tsp. honey, 2 tsp. vegetable oil and 1/2 c. thinly sliced carrots, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In small bowl, mix the peanut butter, soy sauce, 1 tablespoon water and honey; blend and set aside.
In large skillet or wok, heat oil over medium-high heat.
Add carrots and onion; stir until onion is translucent, 2 minutes.
Add remaining ingredients, except rice.
Cook until vegetables are tender, about 3 minutes. Add peanut butter mixture; cook until boiling, 2 minutes.
Stir in rice; cook until heated through.
Arrange cashews on top.
